Bell Peppers

They are simple to make and oh-so-yummy!

Stuffed
Trim the tops off the peppers.
Stuff with a cheese like mozzerella or goat’s cheese.
Optional items like chopped fried bacon bits, onion, bread crumbs
Pop in the oven and make till the peppers are soft. Water and oil aren’t needed as the peppers have enough water to make them melt.

Stewed
Chop them up (any smaller than a finger’s width and they seem sad, too-big pieces just don’t allow flavours to soak in as easily).
Either stick them in an oven with a drizzle of olive oil and bake till done or throw them in a pot with a splash of red wine vinegar and stew till soft.
Drizzle with a little amount of fresh olive oil.

It’s a great accompaniment to an Italian or Middle Eastern meal.
